The Harbor Street roasters’ cold brew, made at home

Coarse coffee, cold water and a day of patience. The roasters at Tidewater Coffee share their ratio.

Tidewater Coffee has roasted beans in a former net store on Harbor Street since 2014. In summer it sells 300 cups of cold brew on a Saturday; in October, it still sells 100.

“Everyone overcomplicates it,” said Pia Lund, who runs the roastery with her brother. “Coffee, water, time. The only thing you can really get wrong is the grind.”

Cook's note: A coarse grind matters: fine coffee makes a muddy, bitter brew and clogs the filter. Ask the roaster to grind it for a French press.
